Avacado...Black Beans...Corn! The ABC Salad!

It's the last day of summer, so lets send it out with bang...
Or an explosion...of Flavor!
This ABC Side Dish is awesome on tacos, on breakfast burritos, or even all by itself!
I like to pair it with shredded chicken tacos, a little sour cream, and a Margarita!
But, since it's the middle of the day, we'll just leave off the Margarita for now!
Sadly, the shredded chicken taco recipe is not mine, but I can tell you that it is an amazing 3 ingredient crockpot miracle!  Interested?  I found in on Pinterest!
And TIP...My sister-in-law showed me a simple way to shred chicken!
Just dump it into your mixer, turn it on medium and...
in less than a minute you have perfectly shredded chicken!
But back to the salad...
There are a lot of similar salads out there, this is just my version!
The cast of characters...suspiciously absent, the red onion!
There it is!
 
Ingredients:
1 green or red pepper
1/2 of a red onion
1 cup cherry or grape tomatoes
1 can black beans
1 can corn
2 tblsp olive oil
2 tblsp lime juice
1 tblsp lemon juice
2 tsp cilantro
1 tsp salt
1 tsp pepper
1/4 tsp cumin
2 avocados
First, open, drain and rinse the corn and beans...
Now chop your onion and green pepper, slice your tomatoes, and toss in the beans and corn!

Pretty!
Ok, now you can add your olive oil, cilantro, lemon, lime, salt, pepper, and cumin!
In case you don't know already, cumin is a remarkable strong spice, and one that you want to measure carefully, 1/4 tsp means 1/4 tsp!
Once you've mixed everything together, it's time for that avocado!
I add it last after I've mixed everything because avocado is delicate and can become mush if over mixed.
So cut it into cubes, and gently fold it into your mix...
And it's done!
You can go ahead and eat the salad immediately, or you can put it in the fridge for later, letting all the flavors meld together...
This is a dish that is actually better the next day!
